5 minute lunch hack

I love this lock down lunch. It's so quick and uses up those small leftover pots I have hanging around in the freezer - not big enough for a main meal, but too big to just throw out.



This is inspired by a Nadiya Hussain recipe. It's so simple, crack an egg in a shallow dish or on a deep plate, add salt and pepper and mix. Put a shop bought tortilla in the bowl and turn it over a few times to make sure it's drenched in egg. Heat a pan to medium and add a little oil, pop the eggy tortilla in there and give it just over 30 seconds then turn it over and give it another 30 seconds. I press it a little with a spatula as this makes it puff up.


Whilst the tortilla is cooking microwave your leftovers of choice: For me this is often vegetarian chilli, or a vegetarian curry. Put your fried tortilla on a plate, lay your leftovers inside in a line and wrap it up like a burrito. Simple!
